Abstract - A comparative study of the fermentative capacities of 11 yeast strains has been made on glucose and lactose substrates. Two of these strains were found to be capable of producing 12 degree alcoholic solutions on lactose. Further tests show that it is possible to obtain under anaerobic conditions and without any additives, 8 degree alcoholic solutions on concentrated whey.
