Abstract - New analysis techniques can now be employed for investigating the biochemistry of milk lipids.
Gas chromatography enables not only the separation of com-pounds but also, in some cases, their identification and their amount. Infra-red spectroscopy is particularly suitable for identification of compounds, and new improvements are described
