Valeurs biologiques comparées des protéines du lait, de la caséine acide et de deux échantillons de caséine lactique

MOCQUOTAbstract - The biological value of the two lactic casein samples is very close to that of acid casein, just as the biological value of paracaseinate and of phosphocaseinate of calcium was in the series of previous tests. Thus our experiments have not provided for assignment to the action either of rennet, of acidification of milk, of lactic ferments or of products arising from their metabolism, lowering of the biological value of casein resulting from coagulation of the milk under conditions approaching those obtained in practice, in manufacture of soft-paste cheeses.
