La graduation des butyromètres a lait. (Etat de la question)
JEAN PIEN Abstract - The present Gerber butyrometer, used with the classic 11 mL pipette, produces :
On a liter of milk, results which are false by about one gram of fatty substance too much;
On a liter of milk, results which are almost exact (Error: 0,14 gram of fatty substance too little from milk with a percentage of 35 grams).
Two methods of correction are proposed: either using different pipettes or modifying the scale of the butyrometers, the international tendency being to modify the pipettes.
The author believes that it would be more reasonable to create the type of butyrometers graduated respectively by the liter or the kilo
