SELLARSAbstract - The experiments which have been carried out have shown that the growth of lactic acid cultures occurs with temperatures much lower than those which are generally accepted. Moreover, the alimentary requirements of these lactic acid cultures are different from those usually noticed. At last, the development of bacteriophages is much less important with the aforesaid temperatures.
